  • 11/4 cups Whole-wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup blueberries
  • Powdered sugar (optional)
  1. Preheat oven to 375F. Spray and flour six 31/4-in. cups of doughnut pan. Whisk together flour, baking powder, and salt; set aside.

  2. Beat butter and sugar with a mixer on medium speed for 30 seconds. Beat in egg, buttermilk, and vanilla. Beat in flour mixture; fold in berries.

  3. Spoon batter into pan, filling each cup 3/4 full. Bake 15 minutes, or until golden; let cool. Remove, dust with powdered sugar, if desired. Clean pan. Repeat with remaining batter to make 4 more doughnuts. Serve at room temperature or reheat. Doughnuts will keep for two days.
